Fruity Easter Loaf
Zest and juice of 2 oranges
200g Rama Perfect Bake, diced
200g caster sugar
350g self-rising flour
4 large eggs
350g cake mix, dried fruit
100g whole glacé cherries
15g cake flour
Preheat oven to 160˚C.
Line a 24cm x 12cm loaf tin with baking parchment and grease with Rama.
Beat the Rama, sugar, flour, eggs and milk into a mixing bowl and beat with an electric hand blender until smooth.
Toss the flour through the dried fruit and cherries. Fold the fruits through the batter.
Spoon the batter into the loaf tin. Bake for 1 hr 20 mins until risen and firm to the touch. Allow to cool slightly before turning out of the pan.
