Date and Walnut Maamoul Biscuits

  • 162g cake flour
  • 85g semolina
  • 150g Rama Perfect Bake, softened
  • 2.5ml allspice
  • 30ml milk
  • 45g sugar
  • 100g walnuts
  • 100g dates, chopped
  • 2,5ml orange extract
  • powdered sugar for dusting
  1. Preheat oven to 180˚C.
  2. Combine the flour and semolina in a medium bowl.
  3. Beat the Rama until smooth. Slowly add the flour mixture to the Rama until combined.
  4. Stir in the milk and allspice. Press the dough together with your hands.
  5. Shape the dough into a round disc, covered in cling wrap and rest for +- 10 minutes in the fridge.
  6. Combine the nuts, dates and orange extract in the bowl of a food processor and process until smooth.
  7. Pinch bite sized balls from the dough and make a hole in the centre using your finger. Fill each little ball with ½-1 tsp. of the date and nut mixture. Close the dough around the date mixture by pinching it closed with your fingers.
  8. Press the dough into the Maamoul mould or cookie tin moulds.
  9. Repeat with remaining dough and nut mixture until all the dough is used up.
  10. Bake Maamoul for 20-25 minutes until golden brown. Dust with icing sugar before serving.
