Chewy Chocolate Biscuits (Brookies)

  • 450g x 70 % dark chocolate, chopped roughly
  • 45g Rama Perfect Bake
  • 225g castor sugar
  • 50g corn flour
  • 5ml baking powder
  • 3 eggs
  • 5ml vanilla essence

  1. Preheat the oven to 180˚C.
  2. Line a baking sheet with baking paper.
  3. Melt 350 g of the chocolate with the Rama over a double boiler on medium heat, stirring continuously. Remove from the heat and keep one side.
  4. Beat the castor sugar, corn flour, baking powder, eggs and vanilla essence with an electric beater in a large mixing bowl until light and fluffy.
  5. Add the chocolate mixture and stir until well combined.
  6. Melt the last 100g of chocolate over a double boiler.
  7. Spoon 1 tbsp. of the cookie dough at a time on the baking tray, and drizzle the rest of the melted chocolate over each biscuit.
  8. Bake for 10-12 minutes or until the biscuits starts to crack and set. Remove from the oven and cool on a wire rack.
